Ceremonial matcha from the Okumidori cultivar, stone-milled in Shizuoka Prefecture. A deep green powder with a soft, faintly sweet flavour and pronounced umami, drunk on its own, without milk and without sugar. A 30g tin makes 30 servings.
Okumidori is a late-maturing cultivar grown in Japan specifically for matcha: a darker leaf and a rounder flavour profile than the more common varieties. This one comes from Asahina, where the bushes are shaded before harvest using the traditional straw method, only the finest young leaves are picked by hand, and those leaves are then ground on stone mills into an ultra-fine powder.
Whisk it thin as usucha, or thicker as koicha. In the morning instead of coffee, before training, or in that afternoon window when you need five minutes off. The making itself takes two minutes and half the pleasure is in it.

How to prepare it
Use 1 to 2g of powder per serving, roughly half a teaspoon. Sift it into a bowl, pour over hot but no longer boiling water, and whisk with a bamboo whisk until it foams. For a thick koicha, double the powder and halve the water. A 30g tin comes to 30 servings.
