Choosing chocolate and snack bars

Cocoa, sugars, milk and protein: product names do not tell the whole story.

How does pure cocoa chocolate differ from a milder recipe?

KAICAO 100% Hacienda Victoria contains only cocoa beans and is unsweetened; expect an intense cocoa taste. KAICAO’s creamy almond and pistachio versions contain 55% cocoa, plus nuts and dates. Cocoa percentage alone does not determine sweetness or protein content, though. Compare the full ingredient lists and start with a smaller pack if you have not tried that recipe before.

Is chocolate sweetened with dates or honey sugar-free?

Not automatically. Dates, honey and syrups contribute to the sugar content. “No refined white sugar” does not mean “sugar-free” either: the chocolate may contain cane sugar, for instance. The ingredients tell you how it is sweetened, while “of which sugars” in the nutrition table shows the total. For products with sweeteners, also read the warnings; some use polyols such as maltitol.

How much protein do I get from one protein bar?

Compare an actual bar, as their weights vary. Jiří Procházka’s Salted Caramel & Chocolate Protein Mixitka contains 30 g of protein per 100 g. One 43 g bar therefore provides approximately 12.9 g of protein. A 30% figure does not mean 30 g in every bar. Compare energy and sugars in the same way; for multipacks, distinguish the weight of one bar from the weight of the whole box.

Is dark chocolate or a protein bar always vegan?

No. KAICAO darkmilk contains camel milk even though it is a dark chocolate. Jiří Procházka’s Protein Mixitka contains whey and casein from milk; some other bars also contain collagen. Choose plant-based options by checking the whole ingredient list. For allergies, also distinguish ingredients in the recipe from possible trace warnings: a vegan label does not guarantee the absence of milk traces.
