This cacao powder from the American chocolate maker Goodnow Farms comes out of their cocoa butter pressing. Goodnow Farms is one of the few makers who press their own butter, so the beans that go into the powder are the same ones that go into their award-winning bars.

The powder is not alkalised, meaning it never sees the alkaline bath that lowers acidity and shifts both colour and flavour. It keeps a sharp, bitter, unmistakably cocoa profile. Nothing else is in the bag, no sugar and no flavourings.

It goes into baking, over porridge or yoghurt, into coffee instead of syrup, and into hot cocoa after training. A tablespoon weighs 7 g and comes to 20 kcal, so a 226 g bag gives you roughly 32 servings.

How to use

One serving is a tablespoon, 7 g. Stir it into batter, coffee, porridge or hot milk. The powder is unsweetened, so expect a strong bitterness and sweeten it to your own taste.
