A fruity darkmilk chocolate from the Lithuanian maker Naive, built on 61% cocoa with golden physalis berries and dried banana worked into the bar. It is a dark chocolate carrying a milk share, so it tastes of fruit long before it tastes of bitter cocoa, and the recipe holds no refined sugar and no emulsifier.
Physalis goes by as many names as it has flavours: golden berry, Inca berry, cape gooseberry. It sits somewhere between an unripe tomato and a sweet sour berry, and that sharp edge is what holds the whole bar together. Banana pulls it back towards sweetness, cocoa adds the depth underneath. Naive takes the beans from dried seed to finished bar in its own workshop, conching slowly the way it was done a century ago.
The fruit notes need a moment to open up, so it pays to let a piece melt slowly. It works with an afternoon coffee, it travels well, and it makes a good gift. The bar comes from the limited Equator collection.

How to enjoy it
Break off a small piece and let it melt slowly on the tongue, as the fruit notes need a moment to open up. It tastes best at room temperature, so take it out of the cold a while before you open it.

Naive: bean-to-bar chocolate from Lithuania that treats cacao like wine
Naive is a small Lithuanian chocolate maker with an unusual approach. Rather than forcing every bean into the same recipe, the team analyses each cacao lot for taste, colour, aroma and texture and only then decides how to roast, grind and finish it.
