A pale bar that is nonetheless a 70% dark. It sounds like a contradiction until you know it is made from white cacao. The criollo porcelana variety produces beans so light they run to beige, because the dark pigment simply is not there. The colour is closer to caramel. The taste is not.
The beans come from Hacienda Betulia near Medellin in Colombia, a farm growing three of its own criollo selections propagated purely by grafting, so nothing crosses with anything else. Naive asked them to adjust the fermentation so the character of the raw bean survives, then made the bar the raw way at low temperatures.
The flavour is brutally bitter, astringent and tannic, with a long drying finish and a sweet hint right at the end. This is not a bar to eat by the row. It is a bar to break tiny pieces off. Nano_lot means micro batches from farms that sometimes produce only thirty kilos of beans a year, and 600 bars of this one were made.

How to enjoy it
Break off a genuinely small piece, this is not a bar to eat by the row. Let it dissolve slowly and wait for the finish, which holds for a long time. At that pace a 50 g bar can last weeks.

Naive: bean-to-bar chocolate from Lithuania that treats cacao like wine
Naive is a small Lithuanian chocolate maker with an unusual approach. Rather than forcing every bean into the same recipe, the team analyses each cacao lot for taste, colour, aroma and texture and only then decides how to roast, grind and finish it.
