Ambrosia is another name for bee bread, the flower pollen that bees pack into the comb and leave to ferment. It is deep amber and tastes of forest and moss. Naive harvests it from its own hives, which sit at the edge of a forest and have been working for 130 years.
Getting pollen and honey into chocolate is one of the hardest things Domantas Uzpalis does. Honey refuses to cooperate with chocolate mass, so raw cane sugar had to come back into the recipe for the bar to hold its structure at all. The result is a 67% dark chocolate carrying notes of forest honey and amber pollen.
The bar is 50 g, about right for a few squares with an evening coffee. The beans come from Bolivia, the making is Lithuanian, and you will not find refined white sugar in the recipe.

How to enjoy it
Break off a piece and let it melt slowly on the tongue so the honey and pollen layer has time to show. It tastes best at room temperature.

Naive: bean-to-bar chocolate from Lithuania that treats cacao like wine
Naive is a small Lithuanian chocolate maker with an unusual approach. Rather than forcing every bean into the same recipe, the team analyses each cacao lot for taste, colour, aroma and texture and only then decides how to roast, grind and finish it.
