Organic raw honey from Ikaria is an unpasteurised honey from the Greek island of Ikaria, where pine meets wildflowers. You eat it by the spoonful, ideally on its own, so nothing gets lost in a hot drink.

The jar holds 250 g of raw honey certified under the organic farming standard GR-BIO-03. It is harvested and jarred by local beekeepers whose families have kept bees for more than five generations. They keep their colonies close to wild, across several types of hive, and step in as little as possible: the honey has never been heated.

The flavour moves through buttery caramel, resin, honeycomb, molasses and wildflowers. A glucose content below 30% means it almost never crystallises and stays runny for a long time. This is not just a kitchen ingredient, a spoonful of it is a small ritual: a quiet moment and full attention on a flavour that was never rushed.

Dosage

Start with 1 teaspoon. It is best on its own, straight off the spoon, left to dissolve slowly in your mouth. Do not stir it into tea, coffee or any other hot drink.
