Choosing honey and understanding its label

MGO, different origins and practical tips for using honey at home.

What does MGO mean, and can I compare it with a 25+ rating?

MGO expresses the methylglyoxal content in milligrams per kilogram of honey. For example, MGO 500+ means at least 500 mg/kg, not the amount in one teaspoon. The organic manuka honey labelled “25+” in this range uses TA, a different scale. MGO, TA and UMF numbers are not interchangeable. Compare matching ratings first; a higher number alone does not determine sweetness or a suitable serving.

How does manuka differ from Ikaria honey?

The manuka in this range comes from New Zealand and has a pronounced, often spicy flavour and thick texture. Ikaria honey comes from Greece, from pine and wildflowers; its description lists caramel and resinous notes. The absence of an MGO rating on Ikaria honey does not mean lower quality. Try a spoonful on its own or add it to yoghurt so its flavour comes through.

Do crystals mean my honey has gone bad?

Crystallisation alone is a natural change in texture, not proof of spoilage or added sugar. Its speed varies with the honey's composition and storage. Keep the jar tightly closed, use a clean, dry spoon and store according to the label, out of sunlight. You can use crystallised honey without liquefying it, for example on bread; there is no need to overheat it for a smooth texture.

Is raw or manuka honey suitable for young children?

Do not give any honey to children under 12 months because of the risk of infant botulism. This also applies to manuka, organic and raw honey, including honey added to food. Raw describes processing, not an exception to this rule. Do not consume honey if you are allergic to it or bee products; if you have a pollen allergy and are unsure whether honey is suitable, discuss it with an allergy specialist.
