A flat white is espresso and milk, with the coffee mattering more than the foam. Naive turned that into chocolate: 61% cocoa solids, five percent ground coffee and grass fed milk powder. Domantas Uzpalis worked on the recipe for close to eight years before letting it out.
The coffee comes from El Salvador, from the farm of the Pacas family, descendants of the Lithuanian house of Pacas. The variety they found there in 1949 gives this bar its character. Cacao and coffee get along well enough on their own, and the milk joins them up and takes the edge off.
The coffee note arrives on the second wave, behind the milk sweetness. The bar works in the afternoon in place of pudding, or alongside an actual coffee if you want to run the theme all the way.

Naive: bean-to-bar chocolate from Lithuania that treats cacao like wine
Naive is a small Lithuanian chocolate maker with an unusual approach. Rather than forcing every bean into the same recipe, the team analyses each cacao lot for taste, colour, aroma and texture and only then decides how to roast, grind and finish it. The goal is to reveal the character of that specific bean, not to hide it under sugar and vanilla.
