Green chocolate made from donkey milk and Japanese matcha. Green Donkey rests on three ingredients: fresh pressed cocoa butter, freeze dried donkey milk and ceremonial Okumidori matcha, which gives the bar both its colour and a strong umami line. No sugar was added to the recipe, so what sweetness there is comes from the milk alone.
Donkey milk is a rare thing to work with, as a jenny gives only a fraction of what a cow does in a day, and you almost never meet it in chocolate. Here it makes up 30% of the bar and brings a fine, faintly sweet dairy note without the heaviness of ordinary milk chocolate. Matcha pushes back with astringency and freshness, so the result tastes more like a dessert from a tea house than a bar off a shelf.
Snapped in half the bar is a deep green and reads more like a tea house dessert than chocolate, which is why it ends up as a gift more often than as a snack. Green Donkey came out of a collaboration between Naive and Adam Raw.

How to enjoy it
Break off a small piece and let it melt slowly on the tongue, as the astringent matcha note arrives behind the dairy sweetness. It tastes best at room temperature.

Naive: bean-to-bar chocolate from Lithuania that treats cacao like wine
Naive is a small Lithuanian chocolate maker with an unusual approach. Rather than forcing every bean into the same recipe, the team analyses each cacao lot for taste, colour, aroma and texture and only then decides how to roast, grind and finish it.
