Jaguar Tree Cacao is a dark bar from the Lithuanian workshop Chocolate Naive, where 70% chocolate made from white heirloom cacao meets whole beans of wild jaguar cacao. Botanically this is Theobroma bicolor, a rarer relative of the common cacao tree that grows in the tropics of Central America.
Jaguar beans taste nothing like ordinary cacao. Ripe beans carry no significant amount of alkaloids, so there is neither bitterness nor astringency. They open on fresh almond and macadamia, move through toasted bread and finish on a spiced, gently smoky note that holds on the palate for several minutes. Domantas Užpalis added smoked paprika and sea salt to his recipe.
The bar weighs 60 g and is sweetened with organic raw cane sugar, 18 g across the whole bar. It rewards slow tasting square by square, works alongside coffee and rounds off a dinner nicely. A good pick if you like pulling a flavour profile apart and want to taste an ingredient you will not find on a supermarket shelf.

How to use
Snap off a square and let it melt slowly on the tongue so the flavour unfolds. It tastes best at room temperature, so let it rest a moment after it comes out of the fridge. Pairs well with coffee and tea.

Naive: bean-to-bar chocolate from Lithuania that treats cacao like wine
Naive is a small Lithuanian chocolate maker with an unusual approach.
