This organic manuka honey comes from the flowers of Leptospermum scoparium, the shrub the Maori call manuka, which thrives in the hill country of New Zealand. The taste is strongly spiced with a faintly minty finish, the texture thick, the colour dark. It is eaten neat, by the spoonful. Sweetening tea with it would be a waste and the flavour is far too big for the job.
The honey is harvested by Bernard Schneider, an Austrian beekeeper from the Waldviertel who settled in New Zealand and keeps bees to organic farming principles. He treats varroa with thyme oil and does not feed his colonies sugar for the winter. The bees forage across 730 hectares of protected countryside, of which around 300 hectares are forest from his own reforestation programme.
The honey is not heated during processing and carries organic certification. The producer rates it TA 25+, Total Activity: unlike MGO and UMF this is not a certified standard but the producer's own measure. Pollen analysis of every batch confirms the honey comes from a single source. The jar holds 250 g.

How to use
Take it by the small spoonful, ideally on an empty stomach and preferably off a non metal spoon. You can also stir it into lukewarm water or milk, but never put it in a hot drink. It does not belong in baking or cooking, keep ordinary honey for that.

Warning
Anyone sensitive to bee products should be careful. Not for children under 12 months. Honey is naturally high in sugars, so eat it in small amounts as part of a varied diet. Store in a cool, dry place after opening.
