Purple chocolate, and the colour is not added. PURPLE Donkey is built on raw purple cacao from the Molecules range, freeze dried donkey milk, freeze dried blueberries and Korean purple bamboo salt. No added sugar and nothing else in the recipe.
Korean bamboo salt is made by packing sea salt into sections of bamboo, sealing them with clay and firing them nine times over. In chocolate it behaves unlike ordinary salt: it does not read as salty up front, it underlines the cacao and sharpens the acidity of the blueberries. The donkey milk lays a fine dairy layer across the top, so the bar tastes earthy, fruity and mineral at once.
The salt and the blueberries only open up at the end, so the bar tastes one way in the first second and another a moment later. It works with coffee, with wine, and as a gift you will not find in every shop. The recipe was developed by Naive together with Adam Raw.

How to enjoy it
Break off a small piece and let it melt slowly on the tongue, as the salt and the blueberries only open up at the end. It tastes best at room temperature.

Naive: bean-to-bar chocolate from Lithuania that treats cacao like wine
Naive is a small Lithuanian chocolate maker with an unusual approach. Rather than forcing every bean into the same recipe, the team analyses each cacao lot for taste, colour, aroma and texture and only then decides how to roast, grind and finish it.
