NUI is raw manuka honey from New Zealand rated MGO 800+. That means at least 800 mg of methylglyoxal per kilogram, or 80 mg per 100 g. The MGO figure states the methylglyoxal content, which is how manuka honeys are graded.

The honey comes from the flowers of Leptospermum scoparium, the shrub the Maori call manuka, which blooms in the hill country of New Zealand for only a few weeks a year. It is thick, strongly spiced and slightly minty, pronounced enough that you eat it by the spoon and stir it into nothing.

It is never pasteurised and never goes above 39 °C, so it stays raw. With MGO rated honeys that is the part that matters: heating a honey pushes its MGO value up, so the figure only means something on a honey nobody has tampered with. The jar holds 250 g.

How to use

Take it by the small spoonful, ideally on an empty stomach and preferably off a non metal spoon. You can stir it into lukewarm water or milk, but keep it out of hot drinks. It does not belong in baking or in sweetening, keep ordinary honey for that.

Warning
