Coconut Milk - Plant-Based Milk Alternative

Coconut milk is often a part of traditional Indian and Thai recipes because it has a pleasant sweet taste and light coconut aroma. Although it looks like classic cow's milk, coconut milk has completely different nutritional values. It does not contain lactose, so it is also suitable for people who are allergic to this milk sugar. Coconut milk is a source of quality protein and fats, which have a beneficial effect on the cardiovascular system. Milk has antibacterial and antiviral properties.

Coconut milk contains vitamins B1, C, E and minerals, especially manganese, which is important in the metabolism of sugars, as well as magnesium, phosphorus and calcium. This is important for healthy bone development and, together with vitamin D, works to prevent osteoporosis. BrainMax Pure Coconut Milk is only coconut pulp and water. This means that you will not find any added substances, artificial flavors, preservatives or sugar in it. All the taste and aroma comes only from organically grown coconuts.

Rice pudding with coconut milk


Ingredients:

  • 100 g rice
  • 150 ml coconut milk
  • A pinch of salt
  • 1 tablespoon coconut syrup

Procedure:

Rinse the rice under cold water. Bring water to a boil in a pot, add a pinch of salt, rinsed rice and cook gently over medium heat for about 15 minutes. Pour the cooked rice with coconut milk and cook for about 5 minutes over medium heat. Sweeten the finished rice with coconut syrup and decorate with fresh fruit, nuts, or chocolate.

Red lentil soup with coconut milk


Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 carrots, cut into rounds
  • 2 teaspoons ground coriander
  • 1/4 teaspoon cinnamon
  • 1 teaspoon sweet paprika
  • 2 teaspoons turmeric
  • Salt and pepper
  • 400 g red lentils
  • Can of diced tomatoes
  • Can of coconut milk
  • Juice of 1/2 lime
  • 700 ml vegetable broth

Procedure:

Let the onion briefly soften in the oil, add the carrots and let them soften for 10 minutes. Add coriander, sweet paprika, cinnamon, turmeric and let it become fragrant. Then add the lentils, tomatoes, broth and cook for about 15 minutes until the lentils are soft. Add coconut milk, mix everything and season with lime juice, salt and pepper.

Blueberry coconut milk ice cream


Ingredients:

  • 400 ml coconut milk
  • 500 g frozen blueberries
  • 50 ml maple syrup

Procedure:

Blend all ingredients in a blender and freeze in popsicle molds or a bowl.
