EXTRA VIRGIN OLIVE OIL RESERVE

Extra virgin specially blended superior category olive oil, pressed using a gentle "cold" process at temperatures up to 27 degrees Celsius, within 8 hours of the end of the manual harvest. The oil is a carefully blended blend of the Nocellara del Belice, Cerasuola and Biancolilla varieties. It is characterized by an intense green color with golden reflections, a rich aromatic composition, a medium-intensity fruity, fully rounded taste, slightly spicy, with a pleasant "end", a hint of tomatoes and herbs. Thanks to the extremely low processing temperatures, Centonze oil contains a high amount of bioactive components and enzymes. The oil is suitable for preparing fish, seafood, vegetable soups and red meat.

Case di Latomie – the place "where Nocellara del Belice is born"

Olive groves stretch along the hills of Sicily's west coast, which gently slope towards the crystal-clear sea and the ancient Greek colony of Selinunte, where olive trees have been cultivated for centuries. Here is the organic farm "Case di Latomie". The owner of the estate is the Centonze family. The estate is set in a location steeped in history "at every turn" and covers a fully fenced area of almost 35 acres. The enchanting scenery of centuries-old olive and citrus groves is located between the ancient quarries of "Latomie" and the ancient walls of the stone fence of "Conigliere", in a landscape typical for long relaxing walks. Only citrus and olive trees are grown here, 
whose advantage is a gentle and considerate method of cultivation and processing. Olive cultivation accompanies the history of the people of Belice. The first settlements in this area are related to the emergence of Selinunte, an ancient colony of Magna Grecia, which was founded in the seventh century BC. The cultivation of oil dates back to the 5th century BC, when the "Selinuntuni" cultivated olive trees and colonized the Valle del Belice.

A matter that should be a given – hand pruning and hand harvesting.

Pruning is done by hand in a traditional way that has been passed down from generation to generation. This allows us to obtain large, fleshy olives that yield high-quality oil. The best olives are harvested by hand in October and November, and pressed into oil within 8 hours by a student. The special nature of the terrain and climate, the centuries-old trees, our passion and love for growing them are the reasons why Centonze olive oils are a true treasure. Immediately after hand harvesting, the olives are transported for processing in perforated boxes to ensure maximum quality. First, they are cleaned of dust, twigs and leaves, then they are gently rinsed with cold water and transferred to vibrating screens to remove remaining impurities.

Gentle "cold" pressing with a maximum temperature of up to 27°C

The whole process takes place in three stages: 1. Crushing, 2. Chopping, 3. Extraction. Each of these operations must be carried out very carefully under the best possible conditions, with the aim of promoting maximum oil quality. In a continuous cycle system, crushing is carried out by pressing the olives onto perforated cylinders, then cutting the olives evenly, ensuring that the temperature never exceeds 27°C. The so-called cold press system is used for pressing, which allows for gentle pressure, so that there is no significant increase in temperature. The goal is to produce an oil with a very high density, a bright green color, with a herbal and spicy aroma and a fruity taste. When extracting oil, we do not use filtering, which significantly compromises the quality of the oil.
