This isn't the cacao you know. This is the cacao the Aztecs knew. MEXICAN by KAICAO is the most authentic path to the original Mesoamerican drink xocoatl – a blend of 96% ceremonial cacao from washed Lavado beans sourced in Tabasco, Mexico, combined with spices and two types of chilli that awaken every sense. No sweetness, no compromises. Just fire and depth in a single cup.

Unlike other KAICAO variants that use Ecuadorian fermented beans, MEXICAN relies on washed (Lavado) beans from Tabasco – the heartland of ancient cacao history. Washed beans skip the fermentation process, which allows them to retain the highest natural levels of flavonoids, antioxidants and theobromine. This is followed by two days of stone grinding and two months of ageing – a process that honours tradition while producing a fine, easy-to-prepare blend. The result is 1,235 mg of theobromine and 2,850 mg of flavonoids per 100 g.

Pasilla chilli brings deep, smoky warmth. Morita chilli adds a more intense heat with dried plum undertones. Cinnamon, star anise and clove round out the blend and give it that unmistakable Mesoamerican character – exactly as xocoatl tasted centuries ago. 20 g of the blend, hot water or plant-based milk, a hand frother or bamboo chasen whisk – and the ritual begins. The 200 g pack provides 10 servings.

Preparation Instructions

Add 20 g of the blend (1 serving) to a cup. Pour in hot water or plant-based milk (approx. 200 ml). Whisk with a hand frother or bamboo chasen whisk until smooth and frothy. Enjoy as a morning wake-up, a ritual experience or a bold alternative to classic cacao.
